- 1 1/2 cups extra virgin olive oil
- 1 3/4 cups sugar
- 3 eggs
- 1 teaspoon salt

- 3 apples (peeled, cored, and sliced)
- 3/4 cup chopped walnuts
- 1 cup fresh blueberries

Method
Prepare the pan
Preheat the oven to 180°C (350°F).
Grease and flour a 9-inch (23 cm) cake or tube pan.
Prepare the batter
In a large bowl, whisk together the extra virgin olive oil and sugar until well combined.
Add the eggs one at a time, mixing well after each addition until the mixture becomes smooth and creamy.
Combine dry ingredients
In another bowl, sift together the flour, salt, cinnamon, and baking soda.
Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
Add fruits and nuts
Add the vanilla extract, sliced apples, chopped walnuts, and blueberries.
Mix gently until evenly distributed.
Bake
Pour the batter into the prepared pan and level the surface.
Bake for about 1 hour and 15 minutes.
Check doneness by inserting a toothpick into the center: if it comes out clean, the cake is ready.
Serving
Let the cake cool before removing it from the pan.
Serve at room temperature, optionally dusted with icing sugar.
