The Florentine steak is one of the best known and appreciated dishes of Tuscan cuisine. The Florentine steak is a portion of the beef loin, is cooked at high temperature and seasoned exclusively with salt and maybe a drizzle of raw EVO oil. Traditionally, the Florentine steak sees the Chianina breed as protagonist or, to remain among the Italian excellence, the Piemontese.

Method:

To prepare a beautiful Florentine steak, it would be ideal to cook the meat on the grill, preferably over charcoal embers. Cook the steak between 6 and 10 minutes on each side and a couple of minutes on the side.

Season with salt and pepper; leave a moment on the heat and serve immediately on the table. Do not cook the meat too much, it must be underdone.

  • 2lb (1 kg) of Fiorentina Steak, T-bon steak

  • Coarse salt to taste

  • Black pepper to taste

  • Difficutly: easy
     
  • Cooking: 10 min.
