Late harvest wines take time and an extraordinary level of focused attention. After the harvest in delay , the grapes are dried on mats to concentrate sugars..Only the best selected Sangiovese grapes are placed on these masts. Here the grapes remain for many months, waiting for the drying.Then the vinification takes place. The wine ages for at least 5 years in small 50-liter oak barrels (Caratelli name), where the wine remains in contact with the "mother" which it regenerates every year to give life to a unique and exceptional VINSANTO "Amber.The result? A sublime blend of acidity and sweetness thanks to the luxurious and rare combination of late harvest Malvasia and Sangiovese Drinking Vin Santo is like liquid chocolate covered dried plum and date. Passito "Luciana" possesses immense opulence and density, with preeminent hints of plum, black cherry, raspberry, chocolate and coffee. Nuances of truffle, tobacco and new leather wrap around the finish. Unique in its class, the essence of this wine epitomizes all the passion and experience that we have developed over the years in our profound devotion towards our work. The grapes are sun-dried for 10 days and then spend three years in small oak barrels. Textured, powerful and gripping on the finish, it still has rich flavors and plenty of power. Concentrated and intense, it could well improve in the bottle too. The 2018 Passito 3 Years Barrel Aged is a traditional blend, mostly (80%) Sangiovese, with the rest evenly divided between the tuscan's typical blending grapes, Malvasia. It comes in with 13% alcohol, 220 grams of residual sugar and 7.37 of total acidity
