Vinification: Fermentation and post-fermentation fermentation in steel tanks of 25 days.
Fermentation: takes place naturally, taking advantage of the indigenous yeasts present in the grapes. The fermentation temperature is maintained between 28 and 30° C.
Aging: once finished malolactic fermentation in steel, follows the aging for 4 years in Slavonia oak barrels of 30, 40 and 60 HL and subsequent aging in bottle for at least 4 months.

The 2011 Brunello di Montalcino is a 100% Sangiovese Grosso wine called in Montalcino: Brunello; that was picked on the gravelly soils as early as 20 September until 15 October, in the vineyards of Montalcino.
It has a show-stopping bouquet that is beautifully defined and very complex, intense, rich and with an elegant flavor of violet with wild wood fruits. It is a wine of strong personality, with a dry, full, smooth and well-balanced taste. This is a Brunello with no hair out of place with flavor.

Brunello di Montalcino is one of Italy's most famous and prestigious wines. DOCG regulations require Brunello vineyards to be planted on hills with good sun exposure, at altitudes not surpassing 600 meters (1968ft). This limit is intended to ensure the grapes reach optimal ripeness and flavor before being harvested.
The Brunello di Montalcino is made exclusively from Sangiovese Grosso grapes, cultivated on the slopes around Montalcino. Sangiovese Grosso is the large-berried form of the normal Sangiovese. Its name means 'little dark one'. The use of “grosso” (big) and its inclusion in the name of the wine is useful to differentiate this wine from Chianti.
