Procedure:
Fill a pot of salted water and bring to a boil, put the pasta and follow the cooking times shown on the packet.Meanwhile, prepare a pan with a little butter, cut the salmon fillet into cubes and sauté in a pan for 5 minutes.
Deglaze with white wine and add the tomato paste or fresh tomatoes. Mix and stir, add the cream and adjust seasoning if necessary. Once cooked the pasta, drain and add to the sauce, let cook for few minutes and mix well. The salmon pasta is ready to be served, add fresh chopped parsley and serve with matching white wine Vernaccia.
