Method:
Wash the fresh salmon slices under running water. Prepare a marinade with extra virgin olive oil, garlic chopped, salt, pepper, parsley and balsamic vinegar. Dip the salmon and leave to marinate for about an hour.
While the salmon rests in the marinade, peel and cut the potatoes, add salt, rosemary and oil and bake for about 30 minutes. After one hour, put the salmon fillets on a baking sheet, and spread the remaining marinade with a small brush.
Cook the salmon in the oven for 20 minutes and check the cooking, add a few minutes if necessary.
Once ready, put the salmon and the baked potatoes in a plate and serve immediately.
