Panzanella Salad

A simple and quick typical Tuscan recipe, to be enjoyed on hot summer days.

Method:

Take the slices of bread and cut the crust off, put the slices of bread to soak in a bowl with water. Cut the onion into slices and soak in a bowl with cold water. Peel the cucumber and cut into thin slices, cut the ripe tomatoes too.

 

Drain the onions and put all the ingredients in a large bowl, add all the other ingredients. Take the bread and squeeze it well and then crumble it. Add the bread and the basil leaves.

Season with salt, extra virgin olive oil and balsamic vinegar. The panzanella Toscana is ready.

 

Ingredients for 4 people:

  • 8 slices of stale bread

  • 3 ripe tomatoes

  • 1 red onion

  • Fresh basil

  • 1 cucumber

  • Extra virgin olive oil

  • Salt to taste

  • Balsamic vinegar
