Rabbit with Olives

Servings: 4 Preparation Time: 1 hour Cooking Time: 30 minutes Difficulty: Medium

Ingredients

  • 1 rabbit (approx. 1.5 kg), cut into pieces
  • 3 cloves garlic
  • 1/2 kg fresh or canned tomatoes
  • Dry white wine
  • Black olives with garlic
  • Extra virgin olive oil
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • Salt to taste
  • Fresh basil
  • Grated Parmesan cheese
  • Pasta of your choice

Instructions

 

Prepare the Base

In a large pot, heat extra virgin olive oil. Add chopped onion, garlic, carrot, and celery. Season with salt and cook for 4–5 minutes, stirring occasionally until softened.

 

Cook the Meat

Add the rabbit pieces and cook until lightly browned. Pour in a splash of dry white wine and allow it to evaporate. Adjust seasoning with salt.

 

Prepare the Sauce

Add the tomatoes and olives. Mix well and simmer gently for about 20 minutes, stirring occasionally, until the sauce thickens and becomes rich in flavor.

 

Cook the Pasta & Serve

Cook the pasta in salted boiling water until al dente. Drain and toss with the sauce. Finish with fresh basil and grated Parmesan cheese before serving.
