Spaghetti alla Mediterranea

Servings: 4 Preparation Time: 10 minutes Cooking Time: 50 minutes

Ingredients

For the Pasta

  • 400 g spaghetti
  • Salt to taste

For the Raw Tomato Sauce

  • 300 g fresh tomatoes
  • Extra virgin olive oil
  • 1 clove of garlic
  • Fresh basil leaves
  • Oregano
  • Salt to taste
  • Pecorino or Parmesan cheese (to serve)

Instructions

 

Prepare the Tomato Sauce

Blanch the tomatoes in boiling water, then peel them and remove the seeds. Place the pulp in a bowl and mash it with a fork. Drizzle generously with extra virgin olive oil and add a crushed garlic clove. Stir in fresh basil leaves and a small handful of oregano. Cover the bowl and let the sauce rest at room temperature for at least 30 minutes to allow the flavors to develop.

 

Cook the Pasta

Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain well while still hot.

 

Combine and Serve

Toss the hot spaghetti with the fresh tomato sauce, mixing thoroughly so the pasta absorbs all the flavors. Serve immediately with a generous sprinkling of grated Pecorino or Parmesan cheese.
