Ingredients
For the Chicken Cacciatora
- 2 lb (1 kg) whole chicken, cut into pieces
- 1 white onion
- 1 celery stalk
- 1 carrot
- 2 cups (400 g) tomato pulp
- 1 clove of garlic
- 1 glass of red wine
- Extra virgin olive oil to taste
- Salt and black pepper to taste
Instructions
Prepare the Vegetables
Start by cleaning and chopping the vegetables. Peel the onion and carrot, trim the celery, and cut everything into small cubes.
Prepare the Chicken
Cut the chicken into pieces, separating thighs, breast, and wings. In a large saucepan, heat a drizzle of extra virgin olive oil. Add the chicken pieces, placing them skin-side down first, and brown for about 10 minutes, turning occasionally.
Add the Vegetables
Once the chicken is nicely browned, add the chopped onion, celery, and carrot along with the whole garlic clove. Season with salt and pepper, mix well, and cook for about 5 minutes.
Deglaze with Wine
Pour in the red wine and allow the alcohol to evaporate completely over medium heat.
Add the Tomato
Remove the garlic clove, then add the tomato pulp. Stir well, cover with a lid, and cook over moderate heat for 30–35 minutes. Cooking time may vary depending on the size of the chicken pieces.
Finish and Serve
The chicken is ready when the meat easily comes away from the bone. Adjust seasoning if needed and finish with freshly chopped parsley before serving.
