Spelt salad

Ingredients

For the Spelt Salad

  • 300 g spelt (farro)
  • 150 g cherry mozzarella
  • 100 g cherry tomatoes
  • 100 g carrots, julienned
  • 50 g rocket (arugula)
  • 1 celery stalk, diced
  • 50 g pitted olives (black and green)
  • Fresh basil
  • Extra virgin olive oil (to taste)
  • Salt (to taste)

Instructions

 

Prepare the Spelt

Rinse the spelt thoroughly and soak it in cold water according to the package instructions. Cook it in boiling water until tender, then drain and let it cool completely in a large bowl.

 

Prepare the Vegetables

Peel and julienne the carrots. Wash the rocket and roughly tear it by hand. Wash the cherry tomatoes and cut them into quarters.

 

Combine Ingredients

Cut the mozzarella in half and dice the celery into small cubes. Once the spelt has cooled, add all the prepared ingredients to the bowl.

 

Season

Add salt and drizzle with extra virgin olive oil to taste. Mix everything well.

 

Chill and Serve

Refrigerate the salad for at least 1 hour before serving. Garnish with fresh basil and serve cold. This salad tastes even better the next day.
