Procedure:
The secret of this recipe lies in the choice of ingredients, which are few, but they must be of the highest quality. Choose a quality pasta, maybe gragnano, produced in Italy.
Also very important is the quality of the oil, always prefer an extra virgin olive oil to cook your own meals. To cook the pasta with extra virgin olive oil and parmesan cheese, first fill a pot with plenty of salted water, add salt and bring to a boil. When the water boils, add the pasta and cook.
Meanwhile, pour in a pan the extra virgin olive oil and light the fire when the pasta is half cooked. Add a ladle of the cooking water and mix together. Now drain the pasta and pour into the pan, mix well and add a little 'cooking water if necessary.
At the end add the grated parmesan and the dish is ready.
