Ingredients
- 400 g high-quality Italian pasta (preferably Gragnano)
- Extra virgin olive oil
- Salt to taste
- Pasta cooking water (as needed)
- Grated Parmesan cheese (optional)
Instructions
Boil the Pasta
Fill a large pot with plenty of water, add salt, and bring to a boil.
Add the pasta and cook according to the package instructions until al dente.
Prepare the Sauce
While the pasta is cooking, pour extra virgin olive oil into a large pan and gently heat it.
Add a ladle of the pasta cooking water and mix to create a light emulsion.
Combine
Drain the pasta and transfer it directly into the pan.
Toss well to coat, adding more cooking water if needed to achieve a silky texture.
Finish and Serve
Adjust seasoning with salt if necessary.
Finish with grated Parmesan cheese, if desired, and serve immediately.
