Ingredients
- 250 g all-purpose flour
- 115 g butter, softened
- 100 g sugar
- 1 egg, separated
- 1 teaspoon baking powder
- A pinch of salt
- Zest of 1 lemon
- 150 g dark chocolate
- Pastry molds or cookie cutters
Instructions
Prepare the Dough
Leave the butter at room temperature until soft.
In a bowl, mix the sugar with the egg yolk until smooth and creamy.
Add a pinch of salt and the lemon zest.
Combine Ingredients
Whisk the egg white until frothy, then fold it into the mixture.
Add the flour and baking powder and mix until a smooth dough forms.
Rest the Dough
Shape the dough into a ball, cover it, and let it rest in the refrigerator for 30 minutes.
Shape and Bake
Roll out the dough to about 1 cm thickness.
Cut into shapes using pastry molds.
Place on a baking tray lined with parchment paper.
Bake in a preheated oven at 180°C for about 15 minutes, until lightly golden.
Dip in Chocolate
Melt the dark chocolate in a double boiler.
Dip half of each cookie into the melted chocolate.
Set and Serve
Place the cookies on parchment paper and let the chocolate set at room temperature for about 1 hour.
Serve once fully set.
