Ingredients
- 1 lobster
- 1 white onion, thinly sliced
- 1 tablespoon chopped parsley
- 2 cloves garlic
- 1/2 cup dry white wine
- 1 red chili pepper
- 500 g fresh tomatoes
- 300 g tomato sauce
- 6 tablespoons extra virgin olive oil
- 300 g spaghetti
- Salt to taste
- Black pepper to taste
Instructions
Prepare the Lobster
Boil the lobster in salted water for about 15 minutes.
Remove the meat from the shell and cut it into pieces.
Prepare the Sauce
In a large pan, heat 4 tablespoons of extra virgin olive oil and sauté the sliced onion over low heat.
Add the chopped tomatoes and cook for about 15 minutes.
Cook the Lobster
In another pan, heat 2 tablespoons of olive oil with a clove of garlic.
Add the lobster pieces and cook for 2 minutes.
Deglaze with white wine and let it evaporate.
Add the lobster to the tomato sauce and cook together for the final 5 minutes.
Season with salt and pepper.
Cook the Pasta
Bring a pot of salted water to a boil and cook the spaghetti until al dente.
Drain the pasta.
Combine and Serve
Toss the spaghetti with the lobster sauce.
Sprinkle with chopped parsley and serve immediately.
Pair with a fresh white wine such as Vernaccia di San Gimignano.
