Ingredients
- 350 g pasta
- 50 fresh basil leaves
- Garlic, to taste
- 2 tablespoons (20 g) pine nuts
- ¼ cup (70 g) grated Parmesan cheese
- Extra virgin olive oil
- Salt, to taste
Instructions
Prepare the Pesto
Combine the basil, pine nuts, grated Parmesan, garlic, and salt in a blender or food processor.
Blend until finely chopped. With the blender running, slowly add extra virgin olive oil until the mixture becomes smooth and well emulsified.
Taste and adjust seasoning if needed.
Cook the Pasta
Bring a large pot of salted water to a boil.
Add the pasta and cook until al dente.
Combine
Drain the pasta and immediately mix it with the pesto.
Serve
Serve with an extra sprinkle of Parmesan and garnish with fresh basil leaves.
