Ingredients
- 500 g chestnut flour
- 650 ml water
- 100 g walnuts
- 100 g pine nuts
- 80 g raisins
- 1 sprig rosemary
- 5 g salt
- 40 ml extra virgin olive oil
Method
Prepare the batter
In a large bowl, mix the chestnut flour with water, extra virgin olive oil, and salt until smooth.
Prepare the ingredients
Soak the raisins in water for a few minutes, then drain them.
Roughly chop the walnuts and add them to the mixture along with the raisins and rosemary.
Assemble
Pour the mixture into a well-oiled baking pan and level the surface.
Decorate with pine nuts, walnuts, raisins, and a few rosemary needles.
Bake
Bake in a preheated oven at 180°C (350°F) for about 30 minutes.
Serving
Let it cool slightly before serving.
Castagnaccio is best enjoyed with a glass of dessert wine.
