Procedure:
Preheat oven to 350 degrees. Grease and flour a 9 inch tube pan. Whisk the extra virgin olive oil and sugar in a mixer, and apart from the rest of the ingredients are assembled. After about 5 minutes, add eggs and beat until the mixture becomes creamy.
Sift together 3 cups flour, salt, cinnamon and baking soda. Add vanilla, walnuts, apples and cranberries.
Transfer the mixture into the prepared pan. Bake for 1 hour and 15 minutes, before removing the cake from the oven put a toothpick in the center of the cake comes out clean and controller which, if it comes out a bit 'wet means that even the cake is well cooked.
