Ingredients
- 2 large eggplants
- 8 slices cooked ham
- 8 slices provolone cheese
- 1/2 can tomato sauce
- 50 g grated Grana cheese
- 8 fresh basil leaves
- 1 teaspoon extra virgin olive oil
- Salt to taste
Instructions
Prepare the eggplants
Wash the eggplants and cut them lengthwise into about 8 slices.
Grill them on a hot grill pan until lightly cooked. They do not need to be fully cooked as they will finish cooking in the oven.
Assemble the rolls
Place a slice of cooked ham, a slice of provolone cheese and a basil leaf on each eggplant slice.
Roll them up and secure each roll with a toothpick.
Bake
Spread the tomato sauce on the bottom of a baking dish and arrange the rolls on top.
Sprinkle with grated Grana cheese and drizzle with a little extra virgin olive oil.
Bake in a preheated oven at 180°C for about 20 minutes.
Serve
Serve hot as an appetizer or side dish. These eggplant rolls are simple, flavorful and perfect for any occasion.
