Ingredients
- 2 lb (1 kg) potatoes
- 2 egg yolks
- Nutmeg, to taste
- 1 cup fresh mozzarella, cubed
- ½ cup baked ham, cubed
- ½ cup (100 g) Parmesan cheese
- 2 eggs
- Breadcrumbs
- Oil for frying
- Salt and pepper, to taste
Instructions
Cook the Potatoes
Wash the potatoes and boil them whole, with the skin on, in a large pot of water for about 40 minutes until tender.
Peel them while still warm and mash them using a potato masher or fork.
Prepare the Mixture
In a bowl, mix the mashed potatoes with egg yolks, salt, pepper, nutmeg, and grated Parmesan.
Add the mozzarella and ham cubes and mix until you obtain a soft but compact dough.
Shape the Croquettes
Take small portions of the mixture and shape them into cylinders with slightly flattened ends.
Place them on a tray lined with parchment paper.
Bread the Croquettes
Dip each croquette first in beaten eggs, then coat evenly with breadcrumbs.
Fry
Heat the oil in a pan and fry a few croquettes at a time until golden brown on all sides.
Drain on paper towels and serve warm.
