Ingredients
- 4 salmon fillets (about 600–700 g total)
- 500 g potatoes
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 4 tablespoons extra virgin olive oil
- Fresh parsley, chopped
- Fresh rosemary
- Salt and black pepper, to taste
Instructions
Prepare the Marinade
In a bowl, mix the extra virgin olive oil, minced garlic, balsamic vinegar, parsley, salt, and black pepper.
Marinate the Salmon
Rinse the salmon fillets and pat them dry.
Coat them with the marinade and let them rest for about 1 hour in the refrigerator.
Prepare the Potatoes
Peel and cut the potatoes into chunks.
Season with olive oil, salt, pepper, and rosemary.
Bake in a preheated oven at 180°C (356°F) for about 30 minutes, until golden and tender.
Cook the Salmon
Place the marinated salmon fillets on a baking tray.
Brush with the remaining marinade.
Bake at 180°C (356°F) for about 15–20 minutes, until cooked through.
Serve
Serve the salmon hot with the roasted potatoes on the side.
