Ingredients
Onion Wine Sauce
- 1 red onion
- 1 chili pepper (optional)
- ½ glass red wine (Vino Nobile di Montepulciano recommended)
- 100 g sugar
- Extra virgin olive oil
Strawberry Wine Sauce
- 5–6 fresh strawberries
- ½ glass white wine (Vernaccia di San Gimignano recommended)
- Extra virgin olive oil
- Salt and pepper to taste
- Balsamic vinegar (to taste)
Instructions
Onion Wine Sauce
Peel and thinly slice the onion, then chop it into small pieces.
Heat extra virgin olive oil in a pan and add the onion.
Cook over medium heat for 3–4 minutes until soft and lightly golden.
Add the chili pepper (optional), then pour in the red wine.
Add the sugar and cook over low heat for 15–20 minutes, until the sauce becomes rich and caramelized.
Strawberry Wine Sauce
Clean and hull the strawberries, then cut them into small pieces.
Place them in a pan with a drizzle of olive oil, salt and pepper.
Cook until softened, then pour in the white wine.
Let the wine reduce completely.
Remove from heat, allow to cool slightly, then finish with a splash of balsamic vinegar to taste.
Serve
Serve both sauces with aged cheeses, cured meats or as gourmet condiments.
