Ingredients
- 1 kg fresh mussels
- 2 cloves of garlic
- 1 chili pepper
- Fresh chives
- 50 g breadcrumbs
- 1 glass of white wine
- Extra virgin olive oil
- Salt and pepper, to taste
- Fresh parsley (optional)
Instructions
Cook the Mussels
In a large pan, heat extra virgin olive oil with the garlic and chili pepper.
Add the white wine and bring to a gentle boil.
Clean the mussels thoroughly under running water, removing any debris and discarding broken or open ones.
Add the mussels to the pan, cover, and cook over high heat for about 5 minutes until they open.
Lower the heat and let them cook briefly until fully opened.
Prepare the Filling
In a bowl, combine the breadcrumbs with chopped chives (and parsley if desired), salt, pepper, and a drizzle of extra virgin olive oil.
Mix until you obtain a slightly moist mixture.
Assemble & Bake
Remove one half of each mussel shell (the empty side), keeping the half with the mussel attached.
Arrange the mussels in a baking dish.
Spoon the breadcrumb mixture over each mussel.
Bake in a preheated oven at 180°C (356°F) for about 10 minutes, until golden and crispy.
Serve
Serve immediately, hot and fragrant.
