Ingredients
- 400 g chicken breast, sliced
- 2 eggs
- 2 tablespoons milk
- 80 g breadcrumbs
- Grated Parmesan cheese, to taste
- Extra virgin olive oil
- Flour, as needed
- Salt and pepper, to taste
- 150 g mozzarella
- 500 g tomato sauce
- 1 teaspoon oregano
Instructions
Prepare the Sauce
In a pan, heat a drizzle of extra virgin olive oil with garlic.
Add the tomato sauce, a pinch of salt, and oregano. Cover and cook over low heat for about 15 minutes.
Bread the Chicken
Prepare three bowls: one with flour, one with beaten eggs mixed with milk and a pinch of salt, and one with breadcrumbs mixed with Parmesan.
Coat each chicken slice first in flour, then in the egg mixture, and finally in the breadcrumbs.
Cook the Chicken
Heat olive oil in a pan and cook the breaded chicken for about 4–5 minutes per side until golden.
Remove and place on paper towels to absorb excess oil.
Assemble and Bake
In a baking dish, spread a layer of tomato sauce, arrange the chicken slices, and cover with the remaining sauce.
Sprinkle with Parmesan and top with sliced mozzarella.
Bake for about 15 minutes until melted and bubbly.
