- 3 eggs
- 80 g sugar
- 250 g flour
- 50 g potato starch
- 100 g butter
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 packet baking powder
- Vegetable oil for frying
- A pinch of salt
- Icing sugar (for serving)
Instructions
Prepare the Dough
In a large bowl, combine the flour, potato starch, sugar, and eggs.
Melt the butter gently and add it to the mixture.
Add the vanilla extract, a pinch of salt, and the lemon zest. Mix until smooth.
Add the baking powder and stir until everything is well combined.
Shape the Frittelle
Lightly moisten your hands with water and shape the dough into small balls.
Place them on a plate while you prepare the oil.
Fry
Heat vegetable oil in a deep pan.
To test the temperature, dip a toothpick into the oil – if it sizzles, the oil is ready.
Fry 2–3 frittelle at a time to maintain the oil temperature.
Cook until golden brown, then remove and drain on paper towels.
Serve
Once slightly cooled, dust generously with icing sugar and serve.
