Preheat the oven to 400°F (200°C).
Arrange the sliced baguette on a baking sheet and brush each slice with extra virgin olive oil.
Bake for about 10 minutes, until the bread is lightly golden and crisp.
Place slices of gorgonzola on each toast and return to the oven.
Bake for about 3 minutes, until the cheese has melted.
Remove from the oven and drizzle with honey.
Serve immediately while warm.
