Ingredients
- 1 cup (200 g) pearl barley
- 2 cups (400 g) cherry tomatoes
- 2 handfuls finely chopped red onion
- ½ cup fresh basil
- 1 cucumber
- 1 celery stalk
- Green olives
- Balsamic vinegar, to taste
- Extra virgin olive oil, to taste
- Salt and pepper, to taste
Instructions
Cook the Barley
Bring a pot of water to a boil.
Add the barley and cook for about 25 minutes until al dente.
Drain and cool it under running cold water.
Prepare the Vegetables
Cut the cherry tomatoes, cucumber, celery, and onion into small pieces.
Roughly chop the fresh basil.
Combine
In a large bowl, combine the cooled barley with all the vegetables and olives.
Season with extra virgin olive oil, balsamic vinegar, salt, and pepper.
Mix well.
Serve
Serve fresh or slightly chilled.
