Bring a pot of salted water to a boil and cook the spaghetti until al dente.
Finely chop the onion.
In a pan, heat the olive oil and sauté the onion with the pancetta for about 5 minutes over medium-low heat until lightly golden.
Add the cooking cream and saffron, stirring well.
Let it simmer gently over low heat until slightly thickened.
Drain the spaghetti and transfer them to the pan with the sauce.
Toss for about 1 minute until well coated.
Plate the pasta and finish with a drizzle of truffle olive oil, if desired.
