Ingredients
- 1 lb (450 g) spaghetti
- 4 cloves of garlic
- 1 cup tomato puree
- 10 fresh anchovies (cleaned and filleted)
- 1 bunch of parsley
- Extra virgin olive oil, to taste
- Salt and pepper, to taste
Instructions
Cook the Pasta
Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
Prepare the Sauce
While the pasta cooks, clean and fillet the anchovies.
In a large pan, heat extra virgin olive oil and sauté the garlic.
Add the tomato puree and chopped anchovy fillets. Season with salt and pepper.
Cook over medium heat for a few minutes until the sauce is well combined and flavorful.
Combine
Drain the spaghetti and transfer them to the pan with the sauce.
Mix well to coat evenly.
Serve
Add freshly chopped parsley and mix.
Serve hot, garnished with extra parsley if desired.
