Ingredients
- 8 zucchini flowers
- ½ cup (100 g) flour "00"
- ½ cup (100 ml) cold sparkling water
- 1 mozzarella
- Diced cooked ham
- Salt and pepper, to taste
- Oil for frying
Instructions
Prepare the Batter
In a bowl, combine the flour with salt and pepper. Gradually add the very cold sparkling water, mixing first with a fork and then with a whisk until you obtain a smooth, lump-free batter.
The batter should be thick enough to coat the zucchini flowers but not too dense.
Prepare the Filling
Gently rinse the zucchini flowers under cold water and pat them dry. Remove the internal pistils.
Stuff each flower with mozzarella and diced cooked ham.
Fry the Zucchini Blossoms
Dip each stuffed flower into the batter, ensuring it is evenly coated.
Fry one at a time in hot oil until golden and crispy.
Drain on paper towels to remove excess oil.
Serve
Season with salt and pepper and serve immediately while hot and crispy.
