Ingredients
- 2 cups (400 g) flour 00
- ½ oz (7 g) fresh yeast
- 6 tablespoons sugar
- 4 tablespoons extra virgin olive oil
- 1 cup (200 ml) water
- 2 bunches of black grapes
Instructions
Prepare the Dough
Dissolve the yeast in half of the water.
Place the flour in a bowl or stand mixer, add the yeast mixture and olive oil.
Knead at low speed, gradually adding the remaining water until you obtain a smooth, elastic dough.
Continue kneading for about 15 minutes.
Transfer to a bowl, cover with plastic wrap, and let rise for about 2 hours, until doubled in size.
Assemble the Schiacciata
Divide the dough into two parts.
Roll out the first portion and place it in a greased baking pan.
Spread half of the grapes evenly over the dough.
Sprinkle with 3 tablespoons of sugar and drizzle with olive oil.
Roll out the remaining dough and place it on top, sealing the edges well.
Top and Bake
Spread the remaining grapes on the surface.
Sprinkle with the remaining sugar and drizzle with olive oil.
Bake in a preheated oven at 190°C (374°F) for 45–50 minutes, until golden brown.
Serve
Remove from the oven and let cool completely before serving.
