Prawns al guazzetto in tomato sauce
For a special occasion or simply for a tasty and tasty dinner with friends, why not try the prawns "al guazzetto"?

Servings: 4 Preparation Time: 15 minutes Cooking Time: 15 minutes

Ingredients

  • 20 prawns (or scampi)
  • 1 cup (200 ml) tomato sauce
  • 1 glass white wine (Vernaccia di San Gimignano recommended)
  • 2 cloves of garlic
  • 1 sprig of parsley
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

 

Prepare the Base

Heat a large pan with a drizzle of extra virgin olive oil. Finely chop the garlic and let it brown gently in the pan.

 

Prepare the Prawns

Wash the prawns and make a cut along the belly using scissors or a knife, opening them slightly along the lower side.

 

Cook the Prawns

Once the garlic is lightly golden, add the prawns to the pan with the belly facing down. Pour in the white wine and cover with a lid. Cook for about 5 minutes.

 

Add the Sauce

Add the tomato sauce, season with salt and pepper, then cover again and cook over low heat for another 10 minutes.

 

Finish and Serve

Sprinkle with freshly chopped parsley and serve hot.
