Ingredients
For the Dough
- 1 kg (2 lb) flour 0 or 00
- 450 ml (2 cups) water
- 7 g fresh yeast (or dry yeast)
- 20 g salt
- 20 g extra virgin olive oil
- 3 g sugar
- Oil for frying
For the Filling
- 3 mozzarella cheeses
- 1 cup tomato sauce
- Fresh basil leaves
- Chili salami
- Cooked ham
- Extra virgin olive oil
- Oregano
- Salt to taste
Instructions
Prepare the Dough
Dissolve the yeast in warm water and add a pinch of salt. Place the flour on a work surface, create a well in the center, and pour in the yeast mixture. Add olive oil and knead until you obtain a smooth, elastic dough.
Form a ball and let it rise for about 2 hours in a warm place, covered with a cloth.
Second Rise
Once the dough has doubled in size, divide it into 4 equal portions. Shape into balls and let them rise again for about 3 hours.
Prepare the Filling
Cut the mozzarella, salami, and ham into cubes. Prepare fresh basil leaves.
Shape the Pizzas
Roll out each dough ball into a disc about 30 cm wide. Spread tomato sauce in the center, leaving a border. Add mozzarella, salami, ham, basil, and seasoning.
Fold the dough into a half-moon shape and seal the edges היטghtly to prevent leaks.
Fry
Heat oil to 170°C (338°F). Fry one pizza at a time, turning occasionally, until golden brown on both sides.
Drain and Serve
Remove with a slotted spoon and place on absorbent paper to remove excess oil. Serve hot.
