Ingredients
For the Stuffed Artichokes
- 4 artichokes
- 2 sausages
- 4 oz (120 g) Pecorino cheese
- Breadcrumbs
- Fresh parsley
- Extra virgin olive oil
- Salt and black pepper to taste
Instructions
Clean the Artichokes
Remove the stems from the artichokes, cut off the tips, and remove the toughest outer leaves. Trim the inner leaves and place the artichokes in a bowl of cold water with lemon juice to prevent discoloration.
Prepare the Filling
Finely chop the onion. In a pan, sauté it with a drizzle of olive oil. Add the chopped artichoke stems and inner leaves, cooking for a few minutes. Season with salt and pepper.
Mix the Ingredients
In a bowl, combine breadcrumbs, grated Pecorino cheese, chopped parsley, and the sausage removed from its casing. Add the sautéed artichokes and onion, mixing well until you obtain a homogeneous filling.
Stuff the Artichokes
Drain and dry the artichokes, then fill them with the prepared mixture.
Cook
Place the stuffed artichokes in a baking dish, drizzle with olive oil, and add a little water (about 200 ml). Cover with aluminum foil and bake in a preheated oven at 200°C (390°F) for about 1 hour.
Finish and Serve
Remove the foil, adjust seasoning if needed, and serve the artichokes hot with their cooking juices.
