Creamy pasta with salmon

Doge

Put together the scent of Vernaccia, the flavor of the sea with a delicious fish such as salmon, and the creaminess of cream. The result is this delicious pasta. Easy, fast and delicious,  finely chopped fresh parsley and a bottle of white wine Vernaccia di San Gimignano as a finishing touch.

Ingredients

  • Pasta: 400 g
  • Fresh salmon fillet
  • Tomato paste: 1 tablespoon
  • Butter
  • White wine: 1/2 glass
  • Cooking cream
  • Chopped fresh parsley
  • Salt: to taste
  • Difficulty: simple
     
  • Preparation: 20/25 min.

 

Procedure:

Fill a pot of salted water and bring to a boil, put the pasta and follow the cooking times shown on the packet.Meanwhile, prepare a pan with a little butter, cut the salmon fillet into cubes and sauté in a pan for 5 minutes.

Deglaze with white wine and add the tomato paste or fresh tomatoes. Mix and stir, add the cream and adjust seasoning if necessary. Once cooked the pasta, drain and add to the sauce, let cook for few minutes and mix well. The salmon pasta is ready to be served, add fresh chopped parsley and serve with matching white wine Vernaccia.
