Ingredients
- 2 sea bream or branzino fillets
- 10 cherry tomatoes
- 1 shot of grappa
- Fresh parsley
- Oregano
- Extra virgin olive oil
- Salt, pepper, and sugar to taste
Instructions
Prepare the Confit Tomatoes
In a pan, add the cherry tomatoes, a drizzle of olive oil, grappa, a pinch of sugar, oregano, salt, and pepper.
Cover with a lid and cook over low heat for 10–15 minutes, until the tomatoes become soft, sweet, and slightly caramelized.
Cook the Fish
Cook the fish fillets in a non-stick pan over medium-high heat for about 3 minutes per side, without adding oil.
Serve
Plate the fish fillets and top with the confit cherry tomatoes.
Finish with fresh parsley and serve immediately.
