Pandoro with mascarpone cream
Pandoro with mascarpone cream is a great classic of Christmas tradition in Italy and it is perfect for the whole festive holidays (from Christmas to Epiphany). With this recipe you could present your Pandoro in a complete different way and amaze your guests!

Ingredients

  • 1 pandoro cake
  • 3 eggs
  • 3 tablespoons sugar
  • 3 tablespoons vanilla sugar
  • 500 g mascarpone
  • Chocolate chips or fresh fruit (for decoration)
  • Icing sugar

Instructions

Prepare the Cream

Separate the egg whites from the yolks into two bowls.

Whisk the egg whites until stiff peaks form.

In another bowl, beat the egg yolks with the sugar and vanilla sugar until light and fluffy.

Add the mascarpone and mix until smooth and creamy.

Gently fold in the whipped egg whites using a spatula, working from the bottom up to keep the mixture airy.

Assemble the Pandoro

Slice the pandoro horizontally into thick layers (about 3 cm).

Spread the mascarpone cream between each layer, slightly rotating them to create the classic star shape.

Decorate

Dust generously with icing sugar.

Decorate with chocolate chips, cherries, or fresh fruit as desired.

Serve

Serve immediately or chill briefly before serving for a firmer texture.
