Polenta Croutons

Servings: 4 Preparation Time: 1 hour 20 minutes Cooking Time: 40 minutes

Ingredients

For the Polenta

  • 300 g cornmeal
  • Salt to taste
  • Water (as needed)

For the Topping

  • 1 red onion
  • 2 spring onions
  • 3 sausages
  • 2 tomatoes
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

 

Prepare the Polenta

Cook the cornmeal in salted boiling water, stirring continuously over low heat for about 40 minutes until thick and smooth. Spread the cooked polenta onto a flat surface or tray and allow it to cool completely. Once cooled, cut it into rectangular slices.

 

Prepare the Topping

In a pan, heat a drizzle of olive oil and sauté the chopped red onion and spring onions until softened. Add the crumbled sausages and cook over medium-high heat until browned. Stir in the chopped tomatoes and cook until the mixture thickens slightly. Season with salt and pepper.

 

Fry and Assemble

Heat oil in a pan and fry the polenta slices until golden and crispy on both sides. Place them on a serving dish and top generously with the sausage mixture. Serve immediately while hot.
