Ingredients
- 4 boneless, skinless chicken breast slices
- 4 slices ham
- 1 cup shredded mozzarella cheese
- ⅓ cup grated Parmesan cheese (+ extra for garnish)
- 24 fresh basil leaves
- Flour, as needed
- 1 white onion
- 1 garlic clove
- 1 carrot
- 1 celery stalk
- 1 glass white wine
- Fresh parsley
- Extra virgin olive oil
- Salt and pepper, to taste
Instructions
Prepare the Soffritto
Finely chop the onion, garlic, celery, and carrot.
Heat a drizzle of olive oil in a pan and sauté the vegetables until soft.
Season with salt and pepper.
Prepare the Rolls
Lay out the chicken slices and fill each with ham, mozzarella, a little grated Parmesan, and basil leaves.
Roll them up and secure with toothpicks.
Cook the Rolls
Place the rolls in the pan with the soffritto.
Add the white wine and a light dusting of flour.
Cook until the liquid reduces and forms a creamy sauce.
Serve
Sprinkle with fresh parsley and extra Parmesan if desired.
