Ingredients
- 2 ½ cups (500 g) flour 00
- 1 tablespoon (15 g) cocoa powder
- 1 cup (200 g) sugar
- 2 teaspoons (10 g) cinnamon
- ¼ cup (50 ml) milk
- 1 cup (200 g) wildflower honey
- 1 tablespoon (16 g) baking powder
- ¼ cup (50 ml) water
- 1 cup (200 g) dark chocolate
Instructions
Prepare the Honey Mixture
Pour the honey and water into a saucepan and heat over low heat until the honey is completely melted. Remove from heat and let it cool.
Prepare the Dough
In a bowl, sift together the flour, cocoa powder, and baking powder. Add the milk, sugar, and cinnamon, then incorporate the honey mixture.
Knead everything by hand until you obtain a compact and uniform dough.
Shape the Biscuits
Transfer the dough onto a floured work surface and roll it out into a thin sheet using a rolling pin. Cut the biscuits into oval shapes using a pastry cutter.
Place them on a baking tray lined with parchment paper, leaving space between each biscuit.
Bake
Bake in a preheated oven at 190°C (374°F) for about 15 minutes, until small cracks appear on the surface.
Remove from the oven and let them cool completely.
Prepare the Glaze
Melt the dark chocolate using a bain-marie. Once melted, let it cool slightly, then dip the top of each biscuit into the chocolate.
Place the glazed biscuits back onto the tray and let them set for about 1 hour.
