Harvest and Process of Amber Olive Oil
The olives, from the appropriately selected olive groves, are harvested exclusively by hand and squeezed first. The processing begins after the removal of the leaves by means of a leaf removal machine followed by a hammer crushing;
The paste produced passes to the kneader at a temperature between 20-22 ° C for about 15 minutes and starts the actual phase of extraction through the decanter.
All this extraction process takes place at low temperature, without adding water, to enhance the aromatic and organoleptic characteristics.
After a careful selection to enhance the quality, the Ambero Oil thus obtained is bottled in the mill in 1 liters bottles
