Ingredients
For the Base
- 500 g yellow, mealy potatoes
- 1 tablespoon tuna in olive oil (drained)
- 2 tablespoons mayonnaise
- Extra virgin olive oil (optional)
- Salt and black pepper to taste
For Decoration
- 10 pickled gherkins, sliced
- ½ sweet red pepper
- 1 black olive
Instructions
Prepare the Potatoes
Boil the potatoes until soft and easily mashable. Drain and mash them with a fork until smooth. Let them cool completely.
Make the Mixture
Add the drained tuna and mayonnaise to the mashed potatoes. Mix well until fully combined. Season with salt and pepper to taste.
Shape the Fish
Transfer the mixture onto a serving platter and shape it by hand into a fish form. You can make it long, round, or as creative as you like.
Decorate
Slice the gherkins into thin rounds and arrange them overlapping to create fish scales, starting from the tail.
Use the red pepper to shape the mouth and tail, and place the black olive to form the eye.
Optional Finishing Touch
If preparing in advance, brush lightly with aspic jelly (optionally flavored with a splash of brandy) and refrigerate until ready to serve.
Serve
Serve chilled as a fun and creative appetizer.
