Ingredients
- 2 chicken breasts
- Lettuce (or mixed salad greens)
- Cherry tomatoes
- Grilled vegetables (zucchini, peppers, etc.)
- Extra virgin olive oil
- Balsamic vinegar
- Salt to taste
Method
Cook the chicken
Bring a pot of lightly salted water to a boil.
Add the chicken breasts and cook for about 20 minutes.
Drain and let them cool, then slice or shred into strips.
Prepare the vegetables
Wash and chop the vegetables.
Grill zucchini and peppers (or your preferred vegetables) and set aside.
Wash the lettuce or mixed greens. You can also add rocket for a more intense flavor.
Assemble the salad
Cut the cherry tomatoes in half and place them in a large bowl.
Add the lettuce and grilled vegetables.
Season with extra virgin olive oil and salt.
Finish
Add the sliced chicken and drizzle with balsamic vinegar.
Toss well and adjust seasoning if needed.
Serve fresh as a light and flavorful summer dish.
