Method:
Wash and cut the tomatoes, dice the mozzarella and set aside. Cook the pasta in salted water. Drain the pasta al dente and set aside. The cold pasta is ready. You can add grated Parmesan to taste.
Put the pasta in a large bowl, add the tomatoes and the mozzarella. Add the pesto, extra virgin olive oil and season with salt. Mix everything well and refrigerate.
