First, prepare the sauce. In a pan, pour the extra virgin olive oil and the garlic. Add the tomato sauce, a pinch of salt and oregano. Cover with a lid and cook over low heat for about 15 minutes.
Prepare three dishes: one with flour, one with breadcrumbs along with Parmesan and a pinch of salt, and the third plate beat the eggs, add the milk and a pinch of salt. Pass the chicken slices first in the flour, then in the egg and finally in the breadcrumbs.
Once breaded all the chicken slices cook in a pan with extra virgin olive oil. Cook for about 4-5 minutes, turn over and finish cooking. Drain and dry on absorbent paper excess oil.
In a baking dish, put a few tablespoons of sauce, place the chicken slices on it and pour the remaining sauce over it. Add a sprinkling of grated Parmesan, complete with the sliced mozzarella and bake for about 15 minutes.
The Parmesan chicken is ready to be served hot.
