Ingredients
- 600 g fresh cod fillet
- 1 lemon
- 1 pink grapefruit
- 1 blood orange (optional but recommended)
- 1 small onion, thinly sliced
- Fresh ginger, thinly sliced or grated
- 4 tablespoons extra virgin olive oil
- Salt and black pepper, to taste
Instructions
Prepare the Fish
Slice the cod fillet as thinly as possible using a sharp knife.
Prepare the Marinade
In a bowl, combine the juice of the grapefruit, lemon, and blood orange.
Add the extra virgin olive oil, sliced onion, and fresh ginger.
Season with salt and black pepper, then mix well.
Marinate
Arrange the cod slices in a container and cover completely with the marinade.
Seal with cling film and refrigerate for 24 hours.
Serve
Serve chilled, optionally paired with a fresh salad of rocket, pears, walnuts, and balsamic vinegar.
