Ingredients
For the Pasta
- 7 oz (200 g) spaghetti
- 7 oz (200 g) fava beans
- 2 artichokes
- 2 potatoes
- 1 clove of garlic
- Extra virgin olive oil
- Salt and black pepper to taste
Instructions
Prepare the Vegetables
Clean and thinly slice the artichokes. Peel and cut the potatoes into small pieces. Shell the fava beans if needed.
Cook the Vegetables
In a pan, combine the artichokes, potatoes, and fava beans with a minced garlic clove, salt, pepper, and a drizzle of extra virgin olive oil. Add a few ladles of water, cover with a lid, and cook over medium heat for about 20–30 minutes until tender and slightly creamy.
Cook the Pasta
Meanwhile, cook the spaghetti in plenty of salted boiling water until al dente.
Combine and Serve
Drain the pasta and add it to the pan with the vegetables. Toss everything together until well combined and creamy. Serve immediately while hot.
