Procedure:
Wash the eggplants, cut them into slices about half a centimeter thick and place them on a baking sheet.
Finely chop the garlic and parsley and mix with the Parmesan and breadcrumbs.
Put on the eggplant slices the mixture and finish with extra virgin olive oil.
Cook the eggplant in preheated oven for about 20/30 minutes at 180 degrees.
