Gnocchi with Pumpkin and Speck
Autumn dish with fresh pumpkin.

A creamy, rich and delicate first course with an autumn flavor where the pumpkin is king.

Method:

Take the pumpkin, remove the peel, the seeds, the filaments and cut it into cubes.

Chop the onion very finely, melt the butter in a pan and brown the onion.

Add the pumpkin cubes and let them brown for a few minutes over medium-low heat and with the pan covered.

In the meantime, bring abundant salted water to a boil, add two mixes of hot water to the pumpkin and continue to cook until the pumpkin is tender.

Add salt and pepper, now blend everything by taking a few cubes of pumpkin aside for decoration and put it back in the pot adding the diced speck slices.

Set aside a few pieces of speck for decoration.

Prepare the gnocchi by cooking them in the hot water, drain them still "al dente" and toss them in the pan for two minutes.

Serve your Gnocchi with pumpkin and speck sprinkling them with washed and cut chives, some pumpkin cubes kept aside and speck.

Ingredients - 2 servings

  • ½ cup (100 g) potatoes gnocchi
  • 4 slices of speck
  • 1 cup (200 g) pumpkin
  • ¼ cup (50 g) white onion
  • 1 knob of butter
  • salt, pepper to taste
