Cut the boiled octopus into medium-sized pieces. Heat a grill pan or skillet and cook the octopus until golden and slightly crispy. Brush with extra virgin olive oil while cooking.
Blend the chickpeas using an immersion blender until smooth. If too thick, add a little hot water to reach a creamy consistency.
Add the saffron to the chickpea cream and mix gently to enhance the flavor and color.
Spread the chickpea cream on a plate and place the grilled octopus on top.
Drizzle with extra virgin olive oil or spicy oil, add salt and pepper if needed, and garnish with fresh parsley. Serve warm.
