Pan Co' Santi

Pan Co' Santi is a sweet typical of the province of Siena. Once the Saturday was prepared, the day when bread was traditionally produced especially in the fall.

Ingredients

  • 350 g of flour
  • 25 g of yeast
  • 1 glass of water
  • 1 small glass of extra virgin olive oil
  • 2 tablespoons sugar
  • 250 g of raisins
  • 150 g of nuts
  • Half tablespoon of pepper
  • a pinch of salt
  • 1 egg yolk
  • Difficulty: medium
     
  • Preparation: 3/4 h

 

Procedure:

Roll the nuts in a few oil.

Dissolve the yeast in lukewarm water. Combine all the ingredients in a bowl by adding the yeast for last, mix it all together, forming a big ball and let it rise for at least 3 hours covered with a cloth.

When the dough is light, divide it into 2 part, cut a cross on each, brush them with egg yolk and bake for 30-35 minutes at 180 ° C.
